Classic Shakshuka

Ingredients:

  • 6 eggs
  • 2 cans crushed tomatoes (800g)
  • 2 bell peppers, diced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 tsp cumin, 1 tsp smoked paprika, ½ tsp chili flakes
  • 100g feta cheese, fresh parsley, olive oil, salt, pepper
  • Crusty bread to serve

Instructions:

  1. Heat olive oil in a large cast iron pan. Sauté onion and peppers for 7 minutes until soft.
  2. Add garlic, cumin, paprika and chili flakes. Cook 1 minute until fragrant.
  3. Pour in crushed tomatoes. Season with salt and pepper. Simmer for 10 minutes until sauce thickens.
  4. Make 6 wells in the sauce with a spoon. Crack an egg into each well.
  5. Cover and cook over medium-low heat for 5–7 minutes until whites are set but yolks are still runny.
  6. Crumble feta over the top, garnish with fresh parsley and serve directly from the pan with crusty bread.
