Ingredients
2 boneless, skinless chicken breasts
1 cup fresh pineapple chunks
1/4 cup teriyaki sauce
1 tablespoon olive oil
1 red bell pepper, thinly sliced
1 carrot, thinly sliced
1 zucchini, sliced
2 green onions, chopped
Salt and freshly ground black pepper, to taste
Heavy-duty aluminum foil
Instructions
Preheat the oven to 400°F (200°C).
Cut two large sheets of heavy-duty aluminum foil and place them on a flat work surface.
Lightly grease the center of each foil sheet with a small amount of olive oil.
Place one chicken breast in the center of each sheet.
Brush the chicken with olive oil and season both sides with salt and black pepper.
Arrange the pineapple chunks, sliced bell pepper, carrot, and zucchini around and over each chicken breast.
Drizzle the teriyaki sauce evenly over the chicken and vegetables.
Sprinkle the chopped green onions over the top.
Fold the foil tightly around the ingredients, sealing all edges to create leak-proof packets.
Before opening the packets, there’s one simple step that helps keep the chicken extra juicy while allowing the vegetables to become perfectly tender.

Baking
Place the sealed foil packets on a baking sheet.
Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Carefully remove the baking sheet from the oven.
Allow the packets to rest for about 5 minutes before opening, as hot steam will escape.
Serving Suggestions
Serve the chicken and vegetables directly from the foil packet or transfer everything to a serving plate.
